Madeleine Cookie Oysters

Easy no-bake oyster cookies made with strawberry madeleines, pink icing, and edible candy googly eyes. A cute 3-ingredient dessert for mermaid parties and under-the-sea celebrations.

Ingredients
  

  • 24 Madeleine cookies Ex. Target bakery strawberry madeleines
  • Pink decorating icing, frosting, or buttercream
  • 24 Edible candy googly eyes

Method
 

  1. Place 12 of the madeleine cookies on a parchment-lined tray or serving plate with the shell ridges facing down.

  2. Add a small dollop of pink icing to the center of each cookie using a spoon or piping bag.

  3. Gently press two edible candy googly eyes into the pink icing on each cookie.

  4. Place the other 12 Madeleine on cookies on top with shell ridges out, let the icing set according to the package directions.

  5. Serve immediately, or store the cookies in a single layer in an airtight container until ready to serve.

Each tiny oyster cookie has its own very dramatic expression.
  • I used strawberry madeleines from the Target bakery, which have a subtle pink color that works especially well for these oyster cookies.
  • Use thick icing so the candy eyes stay in place.
  • Use edible candy eyes only; plastic craft googly eyes are not food-safe!
  • For the best texture, make these the day you plan to serve them.
