Easy Madeleine Cookie Oysters

If a bakery cookie and a tiny cartoon oyster had a very glamorous baby, it would be these Madeleine cookie oysters.

They are sweet, silly, slightly shellfish…in the most adorable way…and ridiculously easy to make! All you need are store-bought strawberry cheesecake madeleine cookies, pink icing, and edible candy googly eyes.

No baking. No piping-bag Olympics. No mysterious ingredients that require a specialty baking store and a small emotional support latte.

I used the strawberry madeleines from the Target bakery, which have the cutest subtle pink tint. They are basically already halfway to becoming a tiny pink oyster with big dreams.

Before summer is over, make a batch for a beach day, mermaid party, backyard hangout, or any snack table that could use more pink icing and more eyeballs.

Step 1: Arrange the Madeleine Cookies

Place 12 of the strawberry madeleine cookies on a parchment-lined tray, plate, or serving board with the shell ridges facing down.

Also, try not to eat half of them while you work. This is a judgment-free zone, but you have been warned.

Step 2: Add Pink Icing

Spoon or pipe a small dollop of pink icing into the center of each madeleine cookie.

The icing should look soft and rounded, like a little oyster body. Aim for about 1 to 1½ inches wide. However, you do not need to create a frosting mountain…these oysters are petite and emotionally low-maintenance.

No piping bag? Add icing to a zip-top bag, snip a small corner, and use it as a quick DIY piping bag. A spoon works, too.

Step 3: Add the Candy Eyes

While the icing is still soft, gently press two edible candy googly eyes into each pink icing dollop. Place the eyes close together for maximum cute-and-confused oyster energy. After that, add the remaining 12 madeleines on top.

Step 4: Let the Icing Set & Add Sparkles (Optional)

Allow the icing to set according to the package directions before stacking, moving, or serving the cookies. If you use canned frosting, the eyes should stay in place quickly, but the frosting may remain soft. If you want to be extra (and honestly, who doesn’t?), add a dash of pink edible glitter to the icing. Keep the cookies in a single layer until party time.

Method
 

  1. Place 12 of the madeleine cookies on a parchment-lined tray or serving plate with the shell ridges facing down.
